The Crumbs Finalists Q&A series – Little Tortilleria

The prestigious  Crumbs Awards 2019 are nearly upon us! These awards celebrate the very best in food and hospitality in Bristol, Bath and the surrounding areas.

Gregg Latchams is the official sponsor of the Food Producer of the year category, in which so many unique businesses that help make the South West food industry thrive are nominated.

The Crumbs Awards is brought to life by the Crumbs Magazine, a publication committed to raising awareness of the region’s buzzing food and drink culture. In the run up to the awards, we will be sitting down with the finalists of our sponsored category to find out a little more about them.

This week we sat down with Chris of Little Tortilleria.

When did you start your business?

We started this side of the business in May 2018.

What does this award mean to you?

It would be an amazing achievement for us as we are still a relatively new business and producing a niche product. We are the first tortilleria in the South West and winning this award would be really encouraging that there is genuine demand and recognition for our skills and tortillas.

Have you been part of the Crumbs Awards before?

Yes, last year our taco truck won in the ‘Trader of the Year’ category. This was great, our taco truck is very recognisable and now has become something that everyone associates with the business.

What is a general day like at The Little Tortilleria?

Hot and busy, but with a lovely background smell of fresh corn tortillas!

We start early, we mix up batches of dough and feed our tortilla machine ‘Maria’ who flattens, cuts and partially cooks the tortillas for us to then cool. We then wrap and deliver to restaurants, popups and food trucks all over the South West.

What is your favourite thing about your job?

When we returned from Mexico, we were disappointed to find that quality fresh tortillas weren’t available in the UK.

Now we can have them ourselves whenever we like! If customers are buying our tortillas, then chances are they really know their stuff when it comes to Mexican food. It’s also given us a nice list of places to go and visit in our spare time to try their delicious food that uses our tortillas!
